Tasty Tales: Coffee cake

For the cake:

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1/2 cup unsalted butter, softened

  • 2 eggs

  • 1 cup brewed coffee, cooled to room temperature

  • 1/4 cup milk

  • 2 teaspoons baking powder

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt


For the coffee buttercream frosting:

  • 1/2 cup unsalted butter, softened

  • 2 cups powdered sugar

  • 2 tablespoons brewed coffee, cooled to room temperature

  • 1 teaspoon vanilla extract


Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. Make the cake batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the brewed coffee and milk, and mix until well combined.

  4. Bake the cake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

  5. Make the coffee buttercream frosting: In a mixing bowl, beat the softened butter until smooth and creamy. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Stir in the brewed coffee and vanilla extract until the frosting is smooth and spreadable.

  6. Assemble the cake: Once the cakes are completely cooled, place one cake layer on a serving plate or cake stand. Spread a layer of coffee buttercream frosting over the top of the cake layer. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.

  7. Serve: Slice and serve the coffee cake as desired. Enjoy the rich and flavorful taste of this delightful coffee-infused treat!
